Cheesy Broccoli Low Carb Soup Recipe
- About 8 oz. chicken broth
- About 6 oz. milk of choice
- About 1/2 to 3/4 cup cheddar cheese (shredded)
- One broccoli crown
- A few sliced carrots
- A little bit of garlic (to taste, one or two cloves), thyme (a small spoonful), and spoonful of flour
Saute the garlic in a pan with non-stick spray, add the flour and cook about a minute, then slowly add the stock and water. Boil and stir a minute or two to thicken. Then add the broccoli, carrots and thyme. Let it simmer, covered, until the veggies are tender.
After that add the milk and simmer, uncovered, four or five minutes. For smooth soup, then blend in a food processor, put back in the pan and add cheese, letting it melt into the soup.
Spicy Tomato Low Carb Soup Recipes
- About 3 cups of chicken broth
- About 1 cup cream
- Can of diced tomatoes
- About 1 cup diced red pepper
- A few cloves of garlic, a little basil, a little onion powder, salt and pepper
- About two tablespoons of sugar, butter and olive oil
Put all the ingredients in a pan and simmer for about a half hour, except for the cream. Blend in a food processor, and then add the cream.
Chilly Cucumbers Low Carb Soup Recipes
- 1 cucumber
- 1 avocado
- 1 onion
- About 1 cup water
- About 1 cup sour cream
- About a spoonful of lime juice – to taste
- A little cilantro, salt and pepper
Blend all the ingredients except the cilantro, salt and pepper in a food processor. Add the cilantro, salt and pepper to taste. Then chill in the fridge for 60 minutes and serve!
